Geez Jamie...I think you're missing something here (like a link to a website). Maybe this one.
http://www.mountainbikebali.com/
My son did a ride down the volcano (on the road) and enjoyed it immensely. About 35 km of downhill i believe with very little pedalling involved. Probably good training for Desert Raid (saddle time) but dont take your eye off the road. It is still two way traffic.
Good luck and do take lots of photos.

Yes I've done it.
Down hill most of the way.
Just one small steep uphill but all good.

Yes
While on the north side of the island ,had a bike lined up for the day ,but declined at the last moment
Could not believe some of the antics of the tourists on bikes in this part of the world
Thongs shorts and singlets ,with the girls wearing even less
Lost count the amount of times I saw tourists riding around with indercators on and forgotten about
Contrary to what many believe the Balinese do have a system that sort of works ,the taxi driver that drove me from Ubud to the air port was saying that tourists on bikes are a huge concern to the local population
Low and behold while at the airport this poor young girl from Costa Rica in a wheelchair was trying to get a drink out of the fridge at one of the many shops ,feeling sorry for her I assisted and of course had a chat
Bike fell on top of her broken ankle ,travel insurance had just run out ,3k US to sort out at a private hospital
Anyway managed to do a downhill bike ride while in Ubud very relaxed way to spend a day on the back roads
